The Flavorful Broccoli and Beef Stir Fry

Beef stir fry is one of the most popular and flavorful stir fries in Asian Cuisines.  Most people who dine in Asian or Chinese Cuisines always include the beef stir fry as their main dish to go with soup and other fried seafood specials.  Well tonight, do not dine out and let us cook a beef stir fry recipe that is so flavorful that it is almost equal with Chinese Cuisines.  As a little background, I learned to cook scrambled eggs when I was young and later was followed by spaghetti and cheese.  This was simple and easy to learn.  But we used to have Chinese friend who taught us how to stir fry beef.  He would demonstrate how to make that incredible beef fry at home and how it can be done so easily and quickly. 

He showed us how to measure the soy sauce just exactly the amount needed for the stir fry.  He also taught us how to marinade the beef and the exact amount of time required for it to absorb the sauce.  He even demonstrated how to cook the stir fry using long chopsticks.  He never answers our questions so what we did, we watch him intently and learned his process.  Maybe, he wanted us to observed the procedure and learn from it through his demonstration.  Action speaks more than words, as they say.  So here is the recipe for you to try at your own kitchen.

THE FLAVORFUL BEEF AND BROCCOLI STIR FRY:

THE INGREDIENTS:
  • One half pound steak, sliced thinly into two to three inches long strips
  • Two tablespoons of soy sauce
  • One tablespoon of oyster sauce
  • One teaspoon of sugar
  • One and one half tablespoons of peanut oil, separated (if you are allergic to peanut oil, use another vegetable oil, and splash a little sesame oil into the finish dish to get a similar effect)
  • Three cups of broccoli florets, including the stalks, peeled and cut into bite size pieces
THE PROCEDURE:


  • In a small bowl, mix together the steak pieces, the soy sauce, the oyster sauce, and the sugar.  Mix well and cover to marinate for several minutes.  If you have enough time, refrigerate it for four to eight hours for best results.
  • Peel the stalks of the broccoli using a peeler.  This makes the stalks tender and easy to chew, while it is faster to cook them.  You will love them.  Cut them into bite size pieces.
  • Begin frying by heating a wok or a large skillet over medium high heat on your American stove.  Add the peanut oil or any neutral vegetable oil.
  • When oil is hot, add the broccoli florets and cook them for one minute stirring occasionally.  Season it with salt and cooked for one minute.  
  • Add the one to two tablespoons of water to create a steaming effect while cooking it for two to three minutes more till the water is absorbed and the broccoli has turned bright green and tender.  Remove from the wok into a large platter and set aside.
  • Reheat the wok and add the one half tablespoon of peanut oil or any neutral oil to the wok.  Once hot, add the marinated steaks cuts to the wok and cook stirring occasionally, until the steak is brown and no longer pink.   For a well done steak, cook for four to five minutes stirring occasionally.
  • Remove from heat and pour the steak and the sauce on top of the dish with the broccoli. 
  • Serve while hot with steamed rice.
